Merry Christmas Eve everyone! I am taking the day off tomorrow but before I go, I HAD to share this recipe for Vegan Buttery Beer Bread. Do you know what beer bread is? I had heard of it a few times (along with Irish soda bread, which is similar) but never really knew just how easy and DELICIOUS it is!

Basically, its the dream recipe. You don’t need yeast, don’t need to wait for it to rise, and to be frank, don’t need to know anything about making bread! I’m telling you- it really is as easy as can be. With a few simple pantry ingredients + beer you too can have this (super) fluffy, buttery bread.

This bread would be an amazing addition to Christmas dinner (I’m sure you have a bottle of beer sitting around somewhere?!) but it is also perfect for sandwiches, dipping in soup and so much more.

What is the beer for? And can you taste it in the bread?

The beer takes the place of the yeast/leavening agent in this recipe! I definitely could taste it a little bit, so make sure you use a mild beer, and also one that you like. I wouldn’t recommend anything strong or fruity. You also don’t want to use a stout. Anything pale with lots of bubbles is best! And again, stay away from beer that is too flavoured, unless that is the vibe you’re going for!

A note on the vegan butter…

I use the Becel sticks for this bread, because I love how they taste and the stick format makes it easy to slice off pieces to go on top. However, I’m sure margarine or tub butter would be fine too!

Description

Vegan buttery, fluffy beer bread with a crispy top. Perfect for sandwiches, dipping in soup, or to go with holiday dinner!


Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3 tbsp sugar
  • 1/4 cup vegan butter, melted
  • 1 bottle (approx 330 mL, 11 ounces) pale beer of choice
  • 6 tsp vegan butter, cold

Instructions

  1. Preheat the oven to 375 F. Line a 9×5 inch loaf pan with parchment paper.
  2. To a large mixing bowl, add flour, baking powder, salt, sugar and whisk well to combine.
  3. Add the melted vegan butter and beer and stir to form a thick dough.
  4. Spread into the loaf pan in an even layer. Dot the 6 tsp of vegan butter over the top (2 rows of 3 tsp) and then bake for 50-55 minutes, or until golden brown on top.
  5. Remove from oven and let cool completely (or slightly, if you want to enjoy warm), then slice and serve!
