Let me put it this way for you. Have you ever come home after a long day at work, or woken up early in the morning before school and though “I can either spend the next 45 minutes in the kitchen, OR I can just bring a crisp $20 bill with me and hope that I can find something between meetings or appointments? Well, that’s why I made this recipe! Let me save you from both spending too much money on lunch, and spending too much time in the kitchen by sharing this recipe for Vegan Bruschetta Pizza Baguettes!

Start to finish, you’re looking at about 25 minutes in the kitchen, including baking time for that perfectly golden crunch of the baguette. But while it cooks, you’re given the perfect amount of time to whip up my super simple and quick bruschetta recipe. This recipe is fresh enough to remind you of the summer months, while being warm and comforting enough to get you through these next few cold fall months! Don’t worry, I’ve got even more warm comforting foods planned for those pesky winter months in case you’re already thinking that far ahead!

How do you make the Bruschetta Pizza Baguette?

This recipe is so easy that this paragraph should really be a short explanation to be honest… so let me ramble on a bit while you skip over this to get to the actual recipe!

For me, I’m always trying to find that sweet spot between easy and accessible, as well as tasty and delicious! We all love home made comfort foods from time to time, even if most of your week is taken up by take-out or healthy foods you meal prep for the week. No matter your lifestyle or typical food choices, small meals like this one that make you feel cozy and warm, all while not taking up so much time in the kitchen are the ones we come back to time and time again.

In this case, that is especially true for me. The first time I made a recipe like this was in a sense, out of necessity. I was too young to find my way to the store on my own, and had to make do with the items we had on hand in the house after school before my parents got home from work! Bread and cheese are almost always a common staple in any North American’s home, and coming across some tomatoes and onion usually isn’t far off either. For me, this is one of those recipes that I find warm and comforting enough to come back to every now and again. All you have to do is:

Start by simply piling on the store bought ingredients! This part takes the least amount of time. For extra flavour, always buy the freshest you can find, like starting by slicing a fresh bakery bought baguette! Freshness is always the key to an extra special meal! After piling on all the pizza sauce and vegan cheese you want, pop it in the oven for that always desirable crunch.

… Lastly, you want to make your bruschetta topping from scratch. And honestly, don’t tell anyone I said this – but you can always buy yourself a small package of pre made bruschetta topping from the store if you want to save even more time… BUT, if you want to stick to my initial advice of “freshness is the key to an extra special meal” – Follow along the instructions below!

Vegan Bruschetta Pizza Baguette

Description

You’ve made it to the easiest recipe you’ll make all week! This Vegan Bruschetta Pizza Baguette is so simple to make. A crunchy fresh baguette loaded with pizza sauce, vegan cheese and of course, homemade bruschetta!


Ingredients

The Baguette:

  • 1 mid sized vegan baguette
  • 1/2 cup pizza sauce
  • 1 cup vegan cheese
  • 2 tbsp olive oil
  • pepper to taste

The Bruschetta:

  • 1 medium diced roma tomato
  • 1/8 cup chopped basil
  • 1/2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1/2 tbsp minced garlic

Instructions

  1. Preheat oven to 400 degrees F.
  2. On a baking sheet, add both sides of the baguette facing up. Continue to add 1/2 of all of the baguette ingredients on to each side.
  3. Place pizza baguette into oven for 8-12 minutes, or until sides are golden brown and crispy. Remove from heat and set aside.
  4. Meanwhile, in a small bowl add all of the bruschetta ingredients and mix to combine.
  5. Top the pizza baguette with fresh made bruschetta and serve warm.
