Let me start off by saying, I have put A LOT of thought in to this. What makes the perfect nachos isn’t a simple question… everybody has their own ideas when it comes to toppings, ingredients and cooking style. But one thing’s for sure, you know when you see the perfect plate of nachos. Let me show you how with these Triple Stacked Vegan Pulled Pork Nachos.

So let’s start off by talking about what we can almost all agree on when it comes to home-cooked vegan nachos and getting that perfect bite every single time.

First, we need to talk about the cheese. This is our first hurdle as most vegans know all too well. What’s the perfect kind of cheese? Which one will melt the best? Will it still taste good? The answer to this is actually more simple than you think, from my experience! My go-to tried and true advice is to always choose your favourite tasting vegan cheese. Don’t worry, I’ve got a simple hack that makes almost any of your favourite vegan cheeses into the perfect nacho cheese consistency! Whether you like the big name brand vegan cheeses on the market, a mix of several, or even a local nut-based cheese, I’ve tried them all, and loved a lot of them!

The trick is to melt the cheese down BEFORE heating the nachos in the oven! Pro tip: This technique can be used in all sorts of dishes that you prefer to have melted gooey cheese for; whether it’s on your grilled cheese, Mac and cheese, baked toast or even burgers!

This helps when it comes to not over-baking the chips, while at the same time getting a gooey bite in every single mouthful. If you still haven’t found a vegan cheese you like, try adding some spices into the melted cheese pot that you love most – garlic, thyme, paprika, basil all work really well! Okay, but what about the toppings?

As you can imagine, this is where the fun begins. Judging from the title, I’m sure you’ve guessed that pulled pork was always my favourite choice of topping. The blend of sweet and savoury with the perfect texture will forever be my go-to. That said, getting the perfect nacho bite comes down to even distribution of ingredients, optimal vegan cheese sauce, and perfectly crunchy nacho chips. So, if vegan pulled pork isn’t for you, try it with you favourite toppings, or just leave it out entirely!

That said, if you want to try something truly tasty, give this pulled pork topping made of jackfruit a try! If you have trouble finding canned or fresh jackfruit where you are, try heading to your nearest asian grocer. They’ve always come through for me in a pinch!

These Triple Stacked Vegan Pulled Pork Nachos are perfect in every way. Loaded with vegan pulled pork, gooey vegan cheese sauce, and baked to perfection in a single serving!


Ingredients

Cheese Sauce:

  • 1/4 cup vegan milk
  • 100g vegan cheddar cheese (I used daiya)
  • 60g of vegan nut based cheese (I used Nuts for Cheese Chipotle Cheddar)
  • pinch of black pepper

BBQ Pulled “Pork”

  • 2 cups shredded jackfruit
  • 2 tbsp vegan butter
  • 1/2 cup BBQ sauce

Nachos

  • 1/2 jalapeno diced
  • 1/2 red bell peppers diced
  • 1/8 red pepper diced
  • 2 cups nacho chips

Instructions

  1. Preheat over to 400 degrees F.
  2. In a pot over medium heat, add all cheese sauce ingredients, stirring quickly until all cheeses are combined and an even consistency. remove from heat.
  3.  Meanwhile, add the butter to a pan to let melt. Then add the jackfruit and bbq sauce, cooking until fully coated and heated throughout. Remove from heat and set aside.
  4. In a small skillet or oven safe dish, add one layer of nachos, red onion, jalapeño, red pepper, vegan cheese and vegan pulled pork. Repeat two more times until the toppings are stacked 3 times.
  5. Heat the nachos in the oven for 5-8 minutes or until nachos are golden brown on the edges and cheese is bubbling. Remove from heat and serve hot.
